Roast Profile for PR Yauco Selecto

Using a single 5 amp KRM variac and a FreshRoast Plus

Sometimes a gentler hand is called for. Some beans like the Puerto Rico Yauco Selecto (PRYS) taste good on the lighter side. I also like this light roast for Galapagos Islands and some Central Americans.

  • Like the medium dark profile I discussed earlier, the PRYS profile uses 2 underfilled scoops (7/8 full). You also want to start at 115V.
  • As the beans start moving start working the voltage down. You want to be at 110 (or maybe a touch lower) by about a minute into the roast. I measure the bean/chamber temperature at around 275F. Here's where I take the first 30 second rest. Just turn off the roaster.
  • Bring the roaster back on at around 105 volts. Here you have to pay attention. You want to try to even out the beans over the next minute or so. They probably won't be perfect but take a second 30 second rest.
  • Still paying attention, keep the voltage around 105 or slightly lower through the first crack. Usually it begins after about a minute and spans around 2 1/2 minutes. Keep an eye on the temperature. I like to keep the temperature within a notch of 400F. After the first crack, I lower the voltage to around 100 or whatever I need to maintain the temperature near 400F.
  • After about 2 to 3 minutes holding near 400F, raise the voltage to 105 or a little over. The temperature should go up to about 425 in a minute.
  • When the temperature reaches 425F, stop the roaster for 45 seconds to a minute. Raise the voltage to 130 and turn the dial to cool. I usually do 1 1/2 to 2 cooling cycles to get the beans below 175F. Cool the rest of the way and store.

Your mileage may vary on times and temperatures depending on your measuring method and ambient conditions. I roast in my basement with an ambient temperature of about 60F and relatively high humidity. I measure the temperature with a Marshall thermometer inserted into a hole I drilled in the chaff collector. To calibrate your setup with mine, note that I measure close to 400 for 1st crack temperature.
